Meet the chef at Aurora’s first conveyor belt sushi restaurant

At the end of this month, visitors and locals can line up for a sushi experience unlike any other. Sushi-Rama Fitzsimons, located on Colfax Avenue across the street from the Anschutz Medical Campus, has a 200 ft. conveyor belt filled with individual plates of sushi delivered directly to your table.

“Conveyor belt sushi is hardly new in Japan,” explained Owner and Sushi Chef, Jeff Osaka. Chef Osaka, a Los Angeles native, opened the first Sushi-Rama in downtown Denver in 2015. After a few years in business, Chef Osaka opened up additional locations across the metro between 2015 and 2018. Sushi Rama Fitzsimons is his fourth location and the first location in Aurora.

Upon entering Sushi-Rama, visitors are greeted to a groovy 70s/80s color scheme complete with mid-century modern light fixtures, bright paint, and colorful leather booths. Upon seating, diners can grab plates of sushi right off the belt at their own pace. Sound fast? Chef Osaka explained, “you can start eating as soon as you sit down. It actually takes longer to process your bill!”

Plates are adorned with two-pieces of sushi and range from $1.50 to $4 per plate. Sushi-Rama is the ideal place to taste and try a selection of sushi, without committing to a full-sized roll. From Lobster Tempura Mango to Spider Rolls, Spicy Tuna, vegetarian options and more, the menu options at Sushi Rama are far from bland.

“What defines us is the quality of sushi, we buy the same fish and rice as all the other high-end sushi restaurants but we make it more accessible to everyone,” Chef Osaka explained. Each plate is micro-chipped to ensure the sushi is being served at peak freshness. Although, they’re usually snatched up by diners well before they’re taken off the line.

In addition to speedy sushi, diners can also try food from their kitchen including Japanese appetizers, salads, soups, and the ever-popular ramen bowl. After your meal is finished, the staff simply adds up your stack of plates and provides you with a total.

Head Sushi Chef Shaun Motoda will be leading the kitchen at Sushi-Rama Fitzsimons. Originally from Hawaii, Chef Motoda has played a role in opening other locations around the Aurora-Denver metro and is a trained sushi chef.
