Inspired by the dark coziness of famous taverns across the pond and subtle nods to Colorado mining history, The Fortunate Prospector’s menu pulls inspiration from traditional English roots featuring such dishes as fish & chips, bangers and mash, Shepherd’s pie, and sticky toffee pudding, alongside cocktails like a Pimm’s Cup and the Single-Handed Sailor, as well as a 10-draft beer tower. Guests are immersed in the whimsical legend of Earl, the bighorn sheep who discovered gold in the Rockies and now invites all to celebrate his prosperity at the pub, located inside the Gaylord Rockies Resort & Convention Center.
